Why This Recipe Works So Well

  • Ripe bananas provide natural sweetness and moisture
  • A baked-in creamy layer adds contrast and indulgence
  • Loaf format keeps it easy, sliceable, and perfect for sharing
  • Balanced sweetness—not overly sugary, just rich and comforting

Ingredients

For the Banana Bread Batter

  • 3 very ripe bananas (about 300 g mashed)
  • 2 large eggs, room temperature
  • 120 g (½ cup) granulated sugar
  • 80 ml (⅓ cup) vegetable oil or melted butter
  • 60 ml (¼ cup) milk or yogurt
  • 1 teaspoon vanilla extract
  • 240 g (2 cups) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon (optional, but recommended)

For the Creamy Filling (Custard or Cheesecake Style)

Option 1 – Custard Filling (as seen in the photo)

  • 250 ml (1 cup) milk
  • 2 tablespoons cornstarch
  • 1 egg yolk
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract

Option 2 – Cheesecake Filling (thicker & richer)

  • 200 g cream cheese, softened
  • 1 egg
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract

👉 Either option works beautifully—the custard is lighter and creamier, while the cheesecake filling is denser and richer.

Step-by-Step Instructions

1. Prepare the Creamy Filling

Custard version:

  1. In a saucepan, whisk milk, sugar, cornstarch, and egg yolk.
  2. Cook over medium heat, whisking constantly.
  3. Once thickened, remove from heat and stir in vanilla.
  4. Let cool until warm (not hot).

Cheesecake version:

  1. Beat cream cheese and sugar until smooth.
  2. Add egg and vanilla; mix just until combined.
  3. Set aside.

2. Make the Banana Bread Batter

  1. Preheat oven to 170°C (340°F).
  2. Line a loaf pan (20–22 cm) with parchment paper.
  3. Mash bananas until smooth.
  4. Whisk in eggs, sugar, oil, milk, and vanilla.
  5. In another bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
  6. Fold dry ingredients into wet ingredients gently—do not overmix.

3. Assemble the Loaf

  1. Pour half of the banana batter into the prepared loaf pan.
  2. Carefully spread the creamy filling over the batter, leaving a small border around the edges.
  3. Top with the remaining banana batter.
  4. Optional: place a sliced banana on top for decoration.

4. Bake
