Diabetic Sugar-Free Christmas Milk Cake

(3 Ingredients | Low-Carb | Guilt-Free)

🥣 Ingredients (ONLY 3)

  1. 3 large eggs
  2. 400 g (14 oz) sugar-free Greek yogurt (0% fat, unsweetened)
  3. Granulated sugar-free sweetener (erythritol or monk fruit) – to taste
    (About 3–4 tbsp, adjust as needed)

✅ No flour
✅ No sugar
✅ No butter
✅ No oil

👩‍🍳 Instructions

1️⃣ Prep the oven

  • Preheat oven to 170°C (340°F)
  • Line a small loaf pan or square baking dish with parchment paper

2️⃣ Separate & whip

  • Separate egg whites and yolks
  • Beat the egg whites until stiff peaks form (this gives the cake its fluffy texture)

3️⃣ Mix the base

  • In another bowl, whisk:
    • Egg yolks
    • Greek yogurt
    • Sugar-free sweetener

Mix until smooth and creamy

4️⃣ Fold gently

  • Add the whipped egg whites in 2–3 batches
  • Fold gently using a spatula (do NOT stir)

5️⃣ Bake

  • Pour batter into the pan
  • Bake for 40–45 minutes
  • Top should be lightly golden and center set

💡 If browning too fast, loosely cover with foil
