Homemade Pickled Beets Recipe

Ingredients

For the Beets:

  • 8 medium fresh beets (about 2–3 lbs)
  • Water for boiling
  • Ice (for cooling)

Pickling Brine:

  • 1 ½ cups vinegar (white vinegar or apple cider vinegar)
  • 1 cup water
  • ¾ cup sugar (you can reduce if you prefer less sweetness)
  • 1 teaspoon salt

Optional Aroma Add-ins (Choose any or combine):

  • 1 cinnamon stick
  • 4 whole cloves
  • 4–6 black peppercorns
  • 1 bay leaf
  • ½ teaspoon mustard seeds
  • ½ teaspoon coriander seeds
  • Sliced garlic (1–2 cloves)
  • Thin onion slices
