Homemade Pickled Beets Recipe
Ingredients
For the Beets:
- 8 medium fresh beets (about 2–3 lbs)
- Water for boiling
- Ice (for cooling)
Pickling Brine:
- 1 ½ cups vinegar (white vinegar or apple cider vinegar)
- 1 cup water
- ¾ cup sugar (you can reduce if you prefer less sweetness)
- 1 teaspoon salt
Optional Aroma Add-ins (Choose any or combine):
- 1 cinnamon stick
- 4 whole cloves
- 4–6 black peppercorns
- 1 bay leaf
- ½ teaspoon mustard seeds
- ½ teaspoon coriander seeds
- Sliced garlic (1–2 cloves)
- Thin onion slices
